Bombay Lemongrass Tchai is a recipe which combines lemongrass with black tea and cardamom made by all street chai wallah’s in Mumbai. In fact it is so common that many wallah’s here find it difficult to imagine making tea any other way.
Chai Wallahs are essential for looking after the energies of the fatigued with this wonderfully aromatic brew. This recipe was taught us by Arun Dorke, a chai wallah who works a busy chai stand next to the municipal centre of Mumbai, servicing lawyers and rickshaw wallah’s alike.
