Bombay Lemongrass Tchai is a recipe that combines lemongrass with black tea and cardamom, as made by street chai wallahs in Mumbai. Indeed, it is so common there that many wallahs find it difficult to imagine making tea any other way.
Chai wallahs play an essential role in their communities, perking up the energies of the fatigued with this wonderfully aromatic brew. This recipe was taught to us by Arun Dorke, a wallah who works a busy chai stand near the municipal centre of Mumbai, serving lawyers and rickshaw wallahs alike.
Blended using Fair Trade Assam black tea and produced using environmentally sustainable methods.
Best served with sugar and your milk of choice.
