Tokojou Kabusecha by the Morimoto family

Truly a tea for connoisseurs, Tokojou Kabusecha is one of the finest green teas produced by the Morimoto family of artisan growers (pictured below). Only the finest leaves from the Oku Midori and Minami Sayaka cultivars are used to create this tea. They are shaded for a full two weeks before harvest, to really enhance the deep, clorophyll soil-enriched umami flavour. Unusually for a Japanese tea, this has a large quantity of tea tips, indicative of the early spring season from whence it comes. This adds a particular floral freshness and subtle yet lasting sweetness on the palate.
