What You’ll Need: • A teaspoon • 500ml teapot with a strainer (ceramic or traditional iron preferred) • Large tea bowl Feel free to improvise with what you have at home, such as a well-cleaned cafetière or a large teapot. The key is in the process. |
Brewing Method: 1. Heat the Water: Draw 500ml of fresh water and heat to 80°C (you’ll know it’s right when the bubbles begin to fizz gently). Using hotter water can scald the leaves and diminish their flavour. 2. Warm the Teapot: Once your water reaches 80°C, pour it into your teapot, then transfer the water to a tea bowl or cup to warm it. This step is crucial because the initial temperature drop (around 7°C) ensures your tea leaves release their best flavours. 3. Add the Tea Leaves: Place 2 heaped teaspoons of Sencha leaves into the teapot. Take a moment to smell the moistened leaves – the divine scent will transport you to the very gardens of Kyusu. 4. Pour the Water: Pour the water from a few inches above the teapot to aerate it, a technique inspired by Arabic tea traditions. This step enhances the tea’s flavour, though the exact science remains a delightful mystery. 5. Brew: Let the tea steep for at least 3 minutes.
